A firm ganache is like a truffle, only denser (more chocolate, less cream). This one is made with cherries soaked overnight in pinot noir. Afterward we reduce the wine and fold it into the ganache, along with the fruit. We then dip the mixture in dark chocolate.
This chocolate pairs well with chocolate-friendly wines such as pinot noir, merlot, and port.
