A firm ganache is like a truffle, only denser (more chocolate, less cream). This one is made with apricots soaked overnight in viognier. Afterward we reduce the wine and fold it into the ganache, along with the fruit. We then dip the mixture in dark chocolate.
This chocolate pairs well with lighter more acidic chocolate-friendly dry red wines.
