A firm ganache is like a truffle, only denser (more chocolate, less cream). This one is made with pinot noir reduction and Willakenzie Lavender. We then dip the mixture in dark chocolate.
This chocolate pairs well with lighter dry red wines with floral notes, including certain pinot noirs.
